CHICKPEA STICKS

Ingredients
100g (3,5 oz/0.6 cups) chickpea flour
50g (1,8 oz/0.3 cups) corn flour*
600ml (20fl oz/2.5 cups) water
1 tsp salt
1 tsp black pepper

Method
Pour water in a pot and bring to boil;
Add chickpea flour, corn flour, salt, black pepper and chives finely cut;
Whisk all of the ingredients together well to ensure that there are no lumbs**, about 2-3 mins;
Take the pot off the heat and adjust the salt content to your taste;
Line a baking tray with parchment paper and pour the mixture on top;
Evenly spread the mixture on a baking tray and let it rest for 30 mins;
Preheat oven to 200 °C (400 °F)
Once the mixture is cold, using a knife or a pizza cutter, cut it into rectangular pieces;
Bake it in the oven for 30-40 mins until they are golden brown and crispy on the outside.
Notes
* The one you would use to make polenta
**You can use a high speed blender to remove the lumbs
