BANANA BREAD

Ingredients

  • 30g (1.1 oz) cocoa powder

  • 50g (1.8 oz) dark chocolate

  • 350g (12.3 oz) oats

  • 4 ripe bananas

  • 30g (1.1 oz) nuts

  • 16g (0.6 oz) baking powder

  • 180ml (6 fl oz) plant milk

Method

  1. Mix oats in a blender until you get oat flour;

  2. Roughly chop dark chocolate and nuts;

  3. In a large bowl mash 3 bananas with a fork or using a blender;

  4. Add baking powder and give it a good stir. Then add the rest of the ingredients, except for oats;

  5. Once you have a uniform mixture, add oat flour and stir it well;

  6. Add the mixture to a loaf pan with parchment paper;

  7. Cut the remaining banana in half lenghtwise and place it on top of your banana bread;

  8. Preheat oven to 180°C (360 ºF) and bake for about 60 mins or until a skewer inserted in the middle comes out clean.

Notes

For the toppings you can get creative. I added just a chocolate spread, I like it simple.
