GREEN SANDWICH

Ingredients
50g avocado flesh
200g sesame bread
40g rocket
2 leaves kale
30g cucumber
Pepper and salt
40g smoked pepper vegan cheese (Happy Cashew)
Method
Cut three slices of sesame bread;
Spread avocado flesh on two slices of bread;
On the slice without avocado flesh lay smoked pepper cheese (Happy Cashew), rocket and sliced cucumber. Season with pepper and salt, then cover with another slice;
Pile on the rest of the smoked pepper cheese, rocket, kale and cucumber, season again and top with the third slice.
Notes
You can use every green you like, these are just my favourite because I get that perfect level of crunchiness.
