Ingredients

  • 20g dark olive pâté

  • 20g pesto

  • Green radicchio

  • 100g aubergine

  • 25g Happy White, vegan camembert (Happy Cashew)

  • 200g mushrooms

  • 5g salt

  • 75g bread*

Method

  1. Clean the aubergine, slice it and place it on the grill for around 20 mins, medium heat;

  2. Clean the mushrooms, slice them up and cook them for around 20 mins with a bit of water**. Remember to add salt once they are almost ready;

  3. Cut the bread in half and grill it***;

  4. Spread dark olive pâté at the bottom and pesto on the other half;

  5. Starting from the bottom just place green radicchio, grilled aubergine, sliced Happy White (Happy Cashew) & mushrooms.

Notes

* Any type of bread is fine
** You can use olive oil instead of water.
*** You can skip this step.
