ALTERNATIVE TARTARE

Ingredients
100g chickpeas (canned)
20ml olive oil
2 tsp black pepper
2 tsp dried basil
10ml lemon juice
1-2 strawberry
4 tsp vegan ricotta
A few leaves corn salad*
60g vegan bacon (Food Evolution)
Method
Rinse and well drain chickpeas;
In a small bowl add olive oil, lemon juice, black pepper and dried basil. Give it a good stir;
Add chickpeas to the bowl and let them marinate for around 10 mins;
In the meanwhile cook vegan beef as shown on the package;
Cut strawberries into cubes;
Now mix chickpeas, vegan beef and strawberries;
Place them in four small cups;
Add vegan ricotta on top and some corn salad.
Notes
* If you can’t find corn salad you can go for some arugula salad.
