BANANA BITES

Ingredients

  • 2 ripe bananas

  • 60g dark chocolate

  • 40g peanut butter*

  • Grains of almonds*

  • 2 tsp coconut oil (optional)

Method

  1. Peel and slice bananas around 6mm thick (you should get 40 slices);

  2. Place the slices on a small baking tin with parchment paper;

  3. Spread peanut butter on top of 20 slices and cover them with the remaining slices. You should get some sort of a sandwich;

  4. Place the baking tin in the freezer for about 60-90 mins;

  5. Once it's almost time to take out the baking tin, roughly chop dark chocolate;

  6. Place it in a small bowl and add coconut oil;

  7. Microwave for around 1 min or until completely melted;

  8. Gently dip each banana bite into melted chocolate. You can either coat the bite completely (by using a fork) or just half;

  9. Finely chop hazelnuts and place your coated banana bites into grains
    of almonds;

  10. Place the bites back in the freezer for about 15 mins;

  11. You are now ready to enjoy your snack. They can be stored in the freezer for 2 months.

Notes

* You can use any nut butter and the same goes for the grains of almonds. You can use cashews, peanuts, walnuts, etc.
