VEGAN BAO BUNS

It was my first time making these vegan bao buns and they are so good. One of the easiest recipes to try out with friends, a parrner or even solo. The buns themselves are really soft and fluffy but don’t take my word for granted, just give them a go!

Ingredients

  • 300g all purpose flour

  • 6g brewer’s yeast

  • 3g salt

  • 5g sugar (optional)

  • 20ml seed oil

  • 140ml warm water

  • 3 medium onions

  • 2 tbsp tamari soy sauce*

  • 165g vegan beef (Food Evolution)

  • 1 tsp pepper

  • 2 tsp garlic powder

  • 1 tsp mustard powder

  • Parsley

  • Chopped walnuts

  • Sweet chili sauce

Method

  1. In a bowl combine flour, brewer’s yeast and sugar;

  2. In a smaller bowl combine warm water, salt and seed oil;

  3. Pour it into flour mixture and stir until uniform;

  4. Tip onto a floured surface. Knead until smooth for 15 mins;

  5. Place the dough in a lightly floured bowl and cover it with a kitchen towel for 1:30h**;

  6. Divide the dough into 8 balls;

  7. Place them on a baking tray and cover them with a kitchen towel for 30 mins;

  8. Cut one piece of parchament paper to line the steamer with. Then cut eight 5 cm squares of parchement paper. They will be placed inside the buns to avoid the two halves from sticking to each other;

  9. On a floured surface stretch the balls out into 1/2 cm thick oval shapes using a rolling pin. Fold each shape in half and insert a square of parchment paper between the two halves;

  10. Half fill the pot, where the steamer will sit on, with water and place the steamer with the buns on top***;

  11. Once the water start simmering, count 10 mins. Once the time is over place the steamer off the heat and let the buns rest for at least 5 mins;

  12. Finely chop the onions, add a drizzle of olive oil to a frying pan and sauté them for around 5 mins. Add the spices and after 2-3 mins the tamari soy sauce. Cook for 3mins more;

  13. Cook the vegan beef as shown on the package;

  14. Garnish your bao buns as shown in the picture above.

Notes

* You can use soy sauce instead.
** The dough has to double in size.
*** If your steamer is not big enough you can steam the first 4-6 buns and do the remaining later.
