VEGAN BROWNIES

Ingredients
130g all purpose flour*
2 tbsp ground flaxseed
60ml soy milk
3g salt
200g dark chocolate
80g margarine
60g almonds**
260g brown sugar
60g cocoa powder
1 ½ tsp vanilla extract
7g baking powder
Optional:
Nut butter
Cocoa nibs
Method
Make the flax egg by combining the ground flaxseed with 6 tbsp of water;
Ground almonds in a high speed blender for about 1 min;
In a large bowl put flour, cocoa powder, almonds, baking powder and salt. Whisk to mix;
Preheat oven to 200 C. Line a 25cm square baking tin with parchment paper;
Using a microwave or a sauce pan, melt 130g of chocolate and soy milk. Once they are melted add the margarine and give it a good stir until combined;
With the help of hand whisk, gently mix the sugar in the melted chocolate and keep going until smooth and combined. Now add vanilla extract, flax egg and remaining chocolate roughly chopped;
Mix together the dry mixture with the wet one;
Spoon the mixture into the baking tin;
Bake for 30-35 mins or until a skewer inserted in the middle comes out clean. Allow the brownies to cool down completely and then you’re ready to cut them into squares.
Pour on top some nut butter and sprinkle the brownies with some cocoa nibs.
Notes
* You can use wholemeal wheat flour if you want.
** Any dried fruit you like is fine.
